What other types of spoilage are they talking about?

In the link below is a recipe for refrigerated pepper pickles. In it they speak of other types of spoilage that can happen, but don't say what or how to tell. Is it just obvious like mold or smell? How do you tell?

Also is it safe to make any pickle recipe and refrigerate it in this manner? It would be good if you didn't have enough of the ingredients to make more than a jar or 2 or if you just want to give some recipes a test run without commiting a whole canner full. Maybe to compare recipes.
