peach butter vs peach jam

I made some peach butter last night using the BBB and followed the recipe except I put Fruit Fresh on the peaches before they cooked. It tastes absolutly divine except it looks more like peach jam/preserves than a brownish sludge like applebutter (I love apple butter but it does look somewhat like sludge).

Is the coloring because of the fruit fresh? Is what I have closer to a preserve/jam made without added pectin?

Do all newbies have this many questions?
