Can I make smaller batches

I am new to canning and learning everything I can about it. I have looked on the USDA website at their canning receipes and all of them call for large amounts of fruits or vegetables. Do I really have to use the amounts they call for? Can I use less amounts? Also the canner manual (Presto) has recipies, can I use those? Well more like they are not specific recipies just more like preparing fruits and vegetables for canning, but I am a little confused on this as they don't tell you how much fruit or vegetables to use.
