Black beans lost color in canning

I followed the canning method from my Presto canning book:

Rehydrating, then draining, cooking for 30", then canning in pint jars/ 75" 2 11 lbs. pressure. No problem; but the beans were not black anymore....dark brown. Was it just too much cooking and draining off the black liquid?
