Chili Bean Recipe

Have any of you seen this recipe. A friend shared it with me and I think she said it was from the Ball Blue Book from a few years back but I can't remember for sure...almost positive ....but I would like to make sure it is a safe recipe.

Chili Beans

4 C.dry Kidney beans

8 C. boiling water

3 C.chopped onion-like mine chopped big

1-pint canned tomatoes,chopped OR 1-16 oz. can

1-red bell pepper, seeded,chopped

6 cloves garlic, chopped-I cheat and use the chopped container from the store

4-chili peppers, seeded, chopped

1/4 C. Worcestershire sauce

6 T. chili powder

2 T. dry mustard

2 T. brown sugar

2 T. salt- I eliminate this

1/4 t. ground black pepper

Wash beans and soak overnite. Drain beans. Combine all ingredients in a 6-8 quart saucepan and boil for 5 minutes over med-high heat. Immedietly fill hot pint jars with beans to within 1" of top, then fill with liquid leaving 1/2" head space. Carefully run a nonmetallic utensil down inside of jars to remove trapped air bubbles. Wipe jar tops and thread clean. Place hot lids on jars and screw bands ob firmly. Process pints 75 minutes in Pressure Canner. See altitude chart on page 13 for canner pressure.

Yield 10 pints.
