BIG pot of white chili recipe

This is what I served today:

White Chicken Chili

Makes 6 servings (25)

2 (16-oz.) cans Great Northern Beans (two two pound bags of beans)

1 medium onion, finely chopped (2 big onions)

3 tablespoons olive oil (grape seed oil)

1 (4-oz.) can chopped green chilies, drained (four cans, didn't drain them)

3 tablespoons all-purpose flour (cornstarch was used)

2 teaspoons ground cumin (4 tablespoons)

1 (14 1/2-oz.) can chicken broth (large box of swanson chicken broth 48 oz.)

1 1/2 cups finely chopped cooked chicken breast (6)

Shredded Monterey Jack cheese (optional)

Sour cream (optional)

Salsa (optional)

In large skillet, cook onion in oil for 4 minutes or until transparent. Add chilies, cumin; cook and stir for 2 minutes (or so). Add the soaked beans and chicken broth; simmer on low temp, according to cooking directions on the package of the beans. Add flour, simmer for 10 minutes or until thickened. Add chicken; cook until hot. Garnish with cheese, sour cream and salsa, if desired.
