Do you have a Really Good Chili Recipe?

I am hosting a lunch for MS at work next month. On our regular lunch day we usually all chip in and have a Bar B Q or send out for something.

Because I am collecting for MS I am going to provide lunch and everyone can make a donation to MS.

I am thinking a huge Crock Pot full of Chili with some great breads and a salad would be good and easy to take to work. I have to feed up to 10 people.

Do you have a Really Good Chili Recipe you'd like to share?

Or if you have any other good ideas for what I can take please let me know.

I always get rave reviews from this one:

2 cups pinto beans (soak overnight)
6 cups water
Cook beans in salted water one hour. Drain and transfer beans to crock pot.
1 onion
3 cloves garlic
dash of cinnamon
dash of cocoa
small can of whole kernel corn
1 1/4 tsp salt
tomato paste
2 tsp chili powder
1/4 tsp cumin
1 tsp oregano
3 tablespoons oil
1 large can whole tomatoes
Saute onion and garlic. Add tomatoes and paste. Mash tomatoes. Add spices to crock pot. Thin with bean stock as needed. Cook overnight or for several hours until beans are soft.

May : I just found this in Micro Soft Works, thought I deleted it, when I did the Original recipe for Fish Puffs , above ^. I'll be making them for Dinner so I'll Post Photo's there. Flounder Puffs A friend and I went fishing often, in Delaware Bay. When we returned to our homes, we cooked the fish. Then we would meet and test each others cooked fish and argue about, which was better. One day we caught a lot of Flounder. I decided to make a batter, dip the pieces ( about the size of a matchbook ) and fry them. I seasoned the batter heavy; for taste, because it dissipates a little. When my fishing buddy tasted them , he declared me the winner. Then he tried it and we are still arguing about who makes the best. Thought I'd share this simple recipe with you. All I did was beat an egg,( or as many as you need) add Garlic & Onion powder. A pinch of Old Bay, dry parsley, salt and pepper. Add enough flour to make a batter (not too thin). Dry the flounder pieces on a paper towel, Sprinkle with Cornstarch & shake. Dip them in the batter, then into a heated frying pan, with your favorite oil. They Puff up a lot. Turn them out onto a paper towel, when cooked. You can cook one piece and taste it. Add more spices if needed. A platter full will disappear in no time !!! Lou

This is a recipe my DSis does all the time. She and her DH love it! I haven't tried because my DH doesn't like salmon. Maple Salmon Allrecipes.com "This is the best and most delicious salmon recipe, and very easy to prepare. I love maple in everything and put this together one night. My husband totally loved it; he did not like salmon that much until he had this." Original Recipe Yield 4 servings Ingredients 1/4 cup maple syrup 2 tablespoons soy sauce 1 clove garlic, minced 1/4 teaspoon garlic salt (optional) 1/8 teaspoon ground black pepper 1 pound salmon Directions In a small bowl, mix the maple syrup, soy sauce, garlic, garlic salt, and pepper. Place salmon in a shallow glass baking dish, and coat with the maple syrup mixture. Cover the dish, and marinate salmon in the refrigerator 30 minutes, turning once. This is the one I have used many times. It is yummy plain or with a fruit topping. We never have enough left to freeze so I can't answer that question. I haven't made these but they sound very good and easy too. Melt In Your Mouth Doughnuts (Made With Canned Biscuits!) 1 ten count can Texas style doughnuts (or your preference, just not flaky layers) 1 Cup Sugar 1 1/2 T cinnamon 1 stick margarine, melted Vegetable Oil For Frying Pour oil into skillet to the depth of a little less than 1/2 an inch and heat on medium to medium high for about five minutes. In a bowl, melt margarine. In a separate bowl, combine cinnamon and sugar. Using a plastic bottle cap, cut the center out of each biscuit. Drop dough into hot oil, watching carefully and turning when golden. Once doughnuts are golden on both sides, remove to paper towel lined plate. Repeat until all dough is cooked, including doughnut holes. Dip both sides of each doughnut into melted margarine, then press both sides into cinnamon sugar mixture. Serve warm. Quick and Easy Jelly Filled Doughnuts 1 can biscuits (make sure you don't get the flaky layers type) 1 can store bought frosting (vanilla, so you can tint it) Vegetable oil Jam, jelly, or preserves Sprinkles Pour oil to a depth of about 1/2 " in a large skillet. I use the Carol Shelby chili package. It makes really really good chili. You could triple it and put in a crockpot to keep hot.

I quit making chili from scratch when I started making Bear Creek Darn Good Chili. It's the bomb.

My family loves my chili and I have to make a big pot so I can share it with everyone.

1 large onion
1 or 2 or 3 cloves of garlic LOL
bay leaf
2 large cans whole tomatoes
2 cans of red kidney beans - rinsed
1-2 pounds ground beef -lean or medium
1 red or green bell pepper diced
1 container of fresh mushrooms
chili powder
Frank's Hot Sauce

I start out by browning the meat and draining off the fat.

Saute onions, garlic, bell pepper until soft in pot you are going to cook the chili in.
Add browned/drained meat
Add the cans of tomatoes - break up tomatoes with a fork
Add the beans
Add bayleaf
Salt and pepper

Add the chili powder - I tend to use 1/2 the bottle because I like the taste but you can use less - whatever your taste

Simmer with lid off for about 30 minutes.

Add sliced mushrooms and some hot sauce if you find you need it spicier or hotter

Simmer for another 30 minutes with lid off until you get the required thickness. I like thick chili so tend to cook it longer.

Start out with less chili powder and taste it a few times as the chili simmers to see if you would like a more chili taste. I always add more. You can also dice up a jalapeno chili if you would like more heat or use red chili flakes.

My chili ends up being a dark red brick colour.

Ladle into bowl and top with shredded cheddar cheese and a dollop of sour cream and a crusty roll on the side.

I make a meatless chili too by using zuchini instead of meat. You can even add zuchini to the meat chili for more body.

No More "Chili" Nights

1 1/2 lbs lean ground beef
1 sm onion, chopped
2 cans (15 1/2 oz) red kidney beans, drained
1 can (29 oz) tomato sauce
1 can (14 1/2 oz) diced tomatoes (green pepper, celery, and onion blend), undrained
1 can (14 1/2 oz) diced tomatoes (sweet onion blend), undrained
1 can water (use 14 1/2 oz can to measure)
1 can (10 oz) diced tomatoes and green chilies, undrained
1/2 green bell pepper, cored, seeded and chopped, plus additional for garnish if you want
3 tablespoons chili powder
2 tablespoons sugar
2 teaspoons salt
1 teaspoon minced garlic or 2 cloves fresh garlic
1 teaspoon Worcestershire sauce
1 teaspoon black pepper
1 teaspoon cumin
Shredded cheese (optional)
Crackers (optional)

1. Brown ground beef and onion 6-8 minutes in large skillet over medium-high heat, stirring to break up meat. Drain and discard excess fat. Transfer meat mixture to Crock Pot.

2. Add remaining ingredients. Stir well to combine. Cover, cook on LOW 8-10 hours. Garnish with cheese and bell pepper, and serve with crackers, if desired.

Just some side notes that I do when making: I omit one of the cans of diced tomatoes (whichever I don't have) and add one can of Diced Tomatoes Zesty Chili Style. I don't have any cumin so I have never added that. Keep meaning to buy it. I don't garnish with cheese or green pepper either. This is a great/tasty recipe. Let me know if you try it and what you think.

BLACK BEAN CHILI

1 lb ground beef
1 chopped onion
1-2 cloves garlic

brown that all together

add
large can tomato sauce
1 cup water w/ 1 buillion cube disolved
2-3 tablespoons tomato paste
1 heaping Tbs. chili powder
1 heaping Tbs. cumin
1/4 tsp. pepper
1 can drained, rinsed black beans
1/8 tsp. ceyenne pepper (optional)

I put that in the crock pot to keep it warm and let all thicken up, cuz chili's even better after it sits awhile. I serve it w/toppings of chopped onion, shredded cheddar cheese and sour cream. It comes out thick, but not chunky, and we prefer the black beans cuz they're smaller.
