Drying food? Freezing? Whats best and CHEAP?

Is drying food feasable in large quantities?

We are going to start buying produce from the farmers market and want to preserve the food to last in the off season.

I'm too scared to can- I've read alot about botulism, etc and I don't think it is worth the investment just for the two of us.

I had two vacuum sealers and all the food I put up lost the seal after frozen, no matter what I tried. Plus it is an expensive investment, machine, bags, after all that it would have been cheaper for me to buy canned.

That leaves me with freezing in siploc bags- not sure how long veg will last with that....

And drying. What are your experiences with drying food? Can you dry in bulk? How long does it keep after?

Any thoughts are appreciated.
