canned roasted peppers mushy

Last fall I canned some roasted red peppers. I used the recipe in the Ball canning book. The peppers were mushy, unlike the store jarred roasted peppers that are still firm. They still taste good, and I put them in salads, but I wouldn't serve them to guests. Does anyone have any suggestion as to why they came out mushy?
