Green Beans & Carrots

I'm hoping somebody can help me and potentially save me tons of work for no reason. I have a 3 year old daughter and an 18 month old boy. I luckily have no problem with them eating their vegetables with the exception of green beans and carrots. They only like the commercially canned variety - I think because they are all mushy. I was thinking of canning my green beans and carrots this year in the hopes that they will eat them. I do have experience with canning, just not these 2 vegetables. If I decide to pressure can them will they come out softer than if I had frozen them? Just wondering what sort of consistency I can expect before I go through all the effort and find them uneaten.

I appreciate any feedback. I don't have any friends or family who is as fanatical about their garden as I am so I thought this would be a good place to get an answer.
