Hi folks, I pulled this recipe off the 'Kumquatgrowers' website. I'd like your critique. I was given a bit over two cups of the fruit and want to do something more than just marmalade, since I have some gift giving occassions coming up. My initial thoughts on this recipe is that there is a LOT of sugar and cloves/cinnamon. I would also consider boiling the fruit in the merlot/sugar liquid instead of pouring off the water. Last, I would BWB the jars! How would you adjust it, if at all?

Merlot Candied Kumquats
1 cups tart kumquats
1-1/2 cups Merlot
1/4 cup water
2 cups granulated sugar
1 cup brown sugar
10 cloves
3 cinnamon sticks
Prepare kumquats:
With a sharp knife cut kumquats in half, remove seeds and put in a pot of cold water just to cover. Bring to a boil, reduce heat and simmer for 8 to 10 min. Drain and refresh with cold water.
Prepare syrup:
In a med boiler add all ingredients except kumquats and bring to a boil, reduce heat and simmer about 10 min. (until it begins to thicken) Add kumquats and simmer an additional 5 min.
Pour into clean jars.
Makes 2 pints.
Great with ham or chicken
