Recipe for breakfast and sweet Italian sausage?

Hello all. I've been lurking here a while, but coming out now with a request for recipes. My wife and I are making sausage this weekend from our first half hog. We have a borrowed KitchenAid meat grinder attachment. We like mild breakfast sausage and we like sweet Italian sausage. Will you pass along some favorite recipes and advice? I know I need at least 30% fat in the mix, but that's about all I know. Do I need any phosphates or other preservatives for frozen sausage? Thanks for any help. Tomatobob
