My 'Angels Camp Tea' I bought from vintagegardens.com is one of my favorite roses, it re-blooms as quickly as a China class rose, and the bush is well-foliaged and grows to 6' tall here.
"Princess de Nassau' is one of my favorite Noisettes, and I love it far more than Blush NOisette' which I gave away after getting a Princess de Nassau' lovely golden stamens, more white than pink here.
My Bubble Bath gives 4 flushes a year, and blooms in Jan.

Cl. Devoniensis is a monster rose. It has canes that are easily twelve feet long and quite thorny. It has a tendency to PM in the hot dry weather that is common here in Northern CA, but it does not seem to bother the plant overmuch. Both the bush form and climbing version are among my top 5 favorite roses. The blooms are smelly for as long as they are on the bush and have a translucent quality to them; sometimes they blush pink and sometimes the blush yellow.

redbird, I have Arcadia LA Tea accidently in total shade - small but healthy. I may have to trim some trees. I don't know if that means she prefers a cooler place or what. Just letting you know. She has lovely flesh-colored flowers.

My Bubble Bath is in the ground 8 months and getting to be pretty big in an arching way - about 3.5' tall, easily 6' across one way, not as wide the other way because he doesn't have many canes yet. Mainly air! The canes arch almost down to the ground. He gets maybe 3 hours of southern sun. Until about a month ago he was a complete "faith walk", because he had only a few wiry canes with precious few leaves. We have similar climates so even if it's just my yard, I wanted to warn you - don't give up on him. I tied string around bamboo stakes to hold up the thin canes that would have been all over the ground. Now he's starting to throw stronger side shoots off these canes giving a fountain effect and more bigger, greener leaves. I've had 3 or 4 small clusters of flowers so far.

I have Arcadia LA Tea.
It's been here maybe 4 years now, and has become a graceful spreading plant somewhere under 5 ft.
I can see that I am in trouble, because I've placed this rose too close to Le Pactole -- but what the heck. One more thicket . . .

It has spread to about 6 ft. wide.
I do expect it to grow taller.
It is completely disease-free here, but I do not know about blackspot, which is rare, here.
In cool, damp weather, blooms do not open here, but they are even lovely half-open.
I'd say they love some heat, so it should like your area.
After all, it CAME from Louisiana!

But since you are just now starting out with this rose, I would advise you to give it enough space to make a showpiece.

I agree with Lux that Angels Camp Tea is a great rose. I've had it less than a year but it's never out of bloom and is such a beautiful shrub. Your choices are great and I wish you lots of luck with them.

I have Angels' Camp Tea and Arcadia Louisiana Tea. They are too new for me to give advice about size, but I will say that you should place these 2 within smelling distance. They are wonderfully scented!
I think that Angel's Camp Tea is going to be a bigun. The growth this year has been rampant. Lots of blooms all of the time.
AR LA Tea has not grown as fast or bloomed as often, and I suspect it's because it's in too much shade.

I just remembered that I also have MFK. The foliage and bush shape is wonderful, a very rounded shrub so far, but I HATE those vegetative centers. The blooms are so beautiful without them. The fragrance isn't nearly as good as the other 2. But maybe I just don't smell it as often because I try to avoid seeing the vegetative centers.
