What veggies shouldn't go in my N-rich lasagna?

I'm learning that carrots and beets won't give nice roots in nitrogen rich lasagna beds. I have added lots of UCG over the past year.

Which of the following plants will give disappointing results based on having Nitrogen heavy beds?

Potatoes

Sweet potatoes

Tomatoes

Onions (other alliums?)

Peppers (sweet or hot, some of each)

Beans (pole)

Canteloupes

I know the beds are N heavy because of the way the beets are growing, and with the knowledge of how many UCG I have added. I don't mind losing the beetroot, since beet greens are so yummy, but I'd like to get a good sense of what other plants will find the N levels too high.

I also don't want to give up the UCG, because the worms are incredible. So, advice on specific veggies?
