timing of cutting scion wood and grafting?

I've been grafting apples, pears, persimmons, and mulberries for about 3 years (and I plan to add pawpaws this year), and I've had at least some success with everything I've tried, but I feel like I ought to know more about timing, in particular. How far in advance before grafting can scion wood be cut? I assume the fridge is the best place to keep it? I've wrapped scion wood in a damp cloth and then in plastic. I've had better success going straight from tree to tree, but I've also missed my opportunity that way. Maybe the cloth I've wrapped scion wood in was too damp? If I'm using scion wood out of the fridge, should I wait until I see bud swell on the rootstock? Are there any significant differences between how I should handle scion wood or graft any of the above types of trees?
