Winter Watering and Feeding Specifics Needed

For the first time ever, I am planning to try overwintering my containerized perennials outdoors. They will be in a westfacing sunny spot, sheltered by the wall of the house on one side. On the remaining sides I plan put up a barrier so that I can pack straw all around the pots for insulation. I understand I need to water them during their dormancy but I can't find any information on how much or often to give water. Is there a rule of thumb on this? How about feeding them: should they get any food at all? What kind and how much? When in fall should I stop their regular feeding? And finally, I hate to confess that I don't know this, but how do I recognize dormancy in plants that don't drop their leaves?

If the rules vary plant by plant, here's what I've got:

Snow Candle Lysimachia

Alberta Spruce

Hardy Dianthus

Heuchera

Gaura

Hydrangea macropylla (venice raven)

blue fescue

english ivy

herbs (english thyme,mother of thyme, greek oregano, chives, spearmint)

All are planted in Al's gritty mix except the mint and chives and they all had a great summer: thanks al!
