Something about row direction that doesn't make sense to me

Everything I read says rows do best running north to south. Most things also say to plant tall plans (trellises, tomatoes, etc) on the north end of the garden so they don't shade other plants.

Now, if your rows are running north to south, you couldn't possibly put a row of tomatoes across the north most line of your garden. The only way I can figure to put the tomatoes at the northern most line would be to run a row of them from east to west....

Maybe I'm missing something but this just doesn't add up to me.
