How would you prepare for a cooking contest? All skills can answer.

Recently, there have been a number of high level cooking contests on TV. I watch to learn stuff, and because there's no news, violence or other disagreeable content. But I'm regularly surprised when the players are unprepared. So, use your imagination: You're you, but a professional chef, with your own kitchen and workers, and good enough to get on a well known elimination challenge contest (North American style--French contests, the ones I've seen, are more civilized and meaningful even with their obsession with ugly silver platters). What do you think you should practice before going? What should you brush up on? How would you prepare? (Just walk in as is is a valid answer, in that people do, but if you say it you must back it up with an explanation of the ways in which you are already prepared.) You can choose to represent your own skills, or make up an "If I were a restaurant chef I'd know..." but please try to be realistic.

This quiz occurred to me as I was shouting at the screen during Top Chef when a contestant made a massively ignorant error and it got me wondering... I hope y'all will think this is fun. It's supposed to be... So have fun!
