It pays to be crazy, pt. 2 (leaven)

I would have put the few raw vegetables left over from Seder into the chicken casserole if I'd thought of it. They turned up under a big bunch of chard. So, when I finally had time to make a loaf of bread, I tossed the dried out jicama thins, and cut up the celery, carrot, radish, scallion, two baby heirloom tomatoes and a few little gem (tiny romaine) leaves. About a double handful all together. I added about two tablespoons after chopping, some pickled jalapeños. I knew the jalapeño brine wasn't enough liquid but vegetables usually weep soon and melt in the oven, so I waited to add more. I used less salt because of the brine, but not too much less thinking too salty would be better than bland.

After soaking the veg for an hour with the preferment stirred in. the flour was as well hydrated as it was going to get, and still way too dry. No noticeable weepage at all! I was deciding between spring and distilled when I saw the last 3/8 inch of wine in the Maniscewitz bottle. and poured it in. I knew it was a bit too much but I can deal with high hydration. But it was too too much so I added some type 00 (the body of the bread is part 00 and part bread flour). Everything looked good. I had a "well stretched glutinous lump". It was slow to rise, but we've been having iffy weather, so I didn't think much of it. It felt right when I shaped it, and rose fairly well. It was soft enough that I expected a pretty nice oven spring. ...

I got an oven sink!! It baked up, but it was deflated and heavy and I was worried. I figured I could always make croutons, since I learned how to make good ones. Or something. It was very late by the time it was out, so I threw a birdseye tea towel over it, to cover while letting the steam out and went to bed. Hypotheses: Too much acid? Unstable air (there'd been thunder)? Something off in the starter discard? The granulated yeast was from a new bag--was it weak? The preferment rose... Too much actual weight in the veg? I don't know, but it was obviously flattish and funky when I took it out.


It's delicious! Really really deicious. The crumb is close but not tight. The texture is actually very pleasant. And it's so good! I had an extra slice . :) It doesn't eat dense. There are bubbles. Just little ones. And it's SO good!! ...and 100% irreproducible.
