Comments (8)I have a couple of chili recipes, so far all have been good in the crockpot. Grains and pasta in the crockpot are a no-no if you're going to leave it for a long time, but that usually isn't an issue with chili. I'm only saying this because vegetarian me has a recipe for cracked wheat chili, which I would not do in the crockpot. But my other recipes turn out great, in fact it's one of the best things for the crockpot, IMHO. I've only made meat-based chili once in the crockpot, with ground turkey. It is good to brown the meat before adding. If you like beans in your chili, another great thing to do is the day before, to make the beans fresh, starting with the dried beans. Comments (11)Beef roast- 3-4 lb beef arm roast- for tenderness 3 cups water 1 medium chopped into slices yellow-and or- red onion 1 packet dry onion soup mix 1 small bag of baby carrots 5 white round potatoes chopped into cubes whit skins on-explain later 1 can of drained mushrooms(or 2 depending on how much you like them) 2 tbsp salt pepper seasoned to taste 2 tablespoon garlic powder- or you can replace salt with garlic salt 2-3 tablespoons of extra virgin olive oil basil,oregano,and any other of your favorite seasonings In crockpot mix together 2 cups water, half packet of onion soup mix, salt and pepper and any other seasonings. Put crockpot on high and let soup warm while we move to the next step Have a large skillet- big enough for the roast- place on stove with olive oil and turn stovetop to medium- let this heat up while your seasoning the beef First cut the beef roast in halves. Blot dry with a paper towel.. next take a knife and make slits in the beef against the grain all the way across just enough to score it for seasonings. season the beef the with the seasonings from above.. Braize the beef for about 5-8 minutes on each and everyside of the beef- until it has a nice brown coat. Once browned use a knife to poke slits through the beef to help the flavors cook through. Next step place the browned beef in the crockpot and put crock pot to either A) medium (will take apprx. 6-8 hours) B) leave it on high (apprx. 4-5 hours) Next in the skillet you had braized the beef in, add your potatoes, carrots, 1 cup water, the rest of the onion soup mix, the chopped onions, mushrooms as well as any seasonigs you desire leave skillet on medium and let simmer while coverd for apprx. 10 -15. This is why you leave the skins on the potatoes, it allows the potatoes to get soft yet the skin keeps them intact as they dont crumble..... yet. Once that has simmered simply pour into your crockpot. cooked for the alotted time. Comments (21)~*~Sister's Beans~*~ 1 lb ground beef ¾ lb bacon (cut into small pcs) 1 cup chopped onion 2 cans baked beans (15oz size) 1 can kidney beans drained (1lb) 1 can lima beans drained (1lb) 1 cup catsup or bbq sauce ¼ cup brown sugar 1 Tbsp liquid smoke 3 Tbsp white vinegar 1 tsp salt Dash of pepper Brown ground beef in skillet, drain off fat and put beef in crockpot. Brown bacon, put pcs in crockpot. Brown onions in remaining bacon grease. Drain, and put in crockpot. Add rest of ingredients and stir together well. Cover and cook on low for 4-9 hours. serves 6 ~*~Chicken Tortilla Soup~*~ 4 boneless chicken breast 2 -15oz.cans Black beans,Undrained 2 -15oz.cans Mexican stewed tomatoes, or Rotel tomatoes 1c. salsa 1-4oz. can chopped green chilies 1-14 1/2 oz. can tomato sauce tortilla chips 2c. grated cheese Combine all ingr. except chips & cheese In slower cooker.Cover.Cook on low 8 hours. Just before serving remove chicken & slice into bite-sized pieces. Stir into soup.To serve put handful of chips In each soup bowl.Ladle soup over chips.Top with chesse. ~~^~~Meatball Stew~~^~~ 3 medium potatoes -- peeled and cut into 1/2-inch cubes 1 (16-ounce) package fresh baby carrots -- quartered 1 large onion -- chopped 3 celery ribs -- sliced 1 (12-ounce) package frozen cooked meatballs 1 (10-3/4-ounce) can condensed tomato soup -- undiluted 1 (10-1/2-ounce) can beef gravy 1 cup water or wine 1 envelope onion soup 2 teaspoons beef bouillon granules Place the potatoes, carrots, onion, celery and meatballs in a 5-qt. slow cooker. In a bowl, combine the remaining ingredients. Pour over meatball mixture. Cover and cook on low for 9-10 hours or until vegetables are crisp-tender. 6 servings ~*~Chicken Surprise~*~ 1 (10+3/4-ounce) can cream of chicken soup 2 (12-ounce) jars chicken gravy 6 frozen chicken breasts, more or less as desired Biscuits, rice or noodles, for serving (optional) Mix the soup and gravy in a slow cooker.
