Comments (34)I had everything....but the chicken? I had a package of arrives frozen organic chicken pieces in the freezer. Perfect for making the empanadas. Good thing my first step was to take it out to defrost. No chicken! I looked several times, looked in the meat drawer in the fridge, looked in the freezer door which is just things like spices and gel packs. After an exhausting few days I wasn't ready to start over. We ordered in. Really good, simple food from a neighborhood place. Today, I need chicken stock. I was just pulling out the little containers in the freezer to see how much I needed to bring upstairs. Exactly where I expected them, and none hiding behind the tamales, but front and center? The package of frozen chicken! Comments (51)What a lovely trip! Such wonderful pictures. Thank you for taking us along. I am definitely more of a 'just be' on vacation type. I do not like having my days planned in advance. I have a question for you solo international travelers. Do you speak the local language? DH wants to go to Spain next year for a convention of one of his hobbies and wants me to go. I have less than zero interest in the hobby, so I would be on my own for several days while he is at the show. I do not speak the language at all and I'm not comfortable wandering on my own when not speaking the language. Yes, I know, plenty probably speak English but still it makes me uncomfortable. I have been thinking about planning a trip to Europe next year. DH has been lots of times to different countries. He used to travel often with his dad who was a film maker and would go to Europe once a year to show his movies in film festivals. I have never been anywhere in Europe. I know, I know. I've just always selected beach vacations over everything else. But I will be retiring this year and I'm thinking a European vacation when I am not coming back to work would be nice. I'm thinking 3 days-ish in Paris and then 10 days-ish in Italy. Not a clue how to plan this even though I can plan a beach or cruise vacay in my sleep! Comments (41)I started making a big pot of soup with one of the beloved helpers many days ago. I got too tired to finish it and thought to toss the veg and star over today with two of them. It was all perfectly fine. Maybe a little dry at the top of the container, but you'd think they were prepped yesterday. So I put the container of royal corona beans which had been soaked for a full day in water, then in packaged beef broth in the fridge all this time. I forgot about the salt in the broth. The beans are technically cooked now, but didn't soften. Anyway, I started by boiling them in the 4 qt. pot, which was on the stove clean, to start them cooking and making sure that the broth was okay after sitting. By the time I'd chopped up the bits of other veg which had been cleaned only, I was not thinking about the big pot and giant cabbage, but that my 8+ cups of veg would fit in the broth and bean pot. I just dumped them in. A couple fennel with stalks and fronds, three red and three yellow beets, a couple pf leeks, white and green up to the fibrous part, a couple of black radishes and some water. The beef broth had plenty of flavor beyond the salt. I'll add spices while reheating if I feel like it. Lunch was bi-color sweet corn on the cob, artichoke with a sour pickle sauce, cot-on-candy apricots and gingerbread. And one of the beloveds warmed up a serving of M&C from the freezer. Comments (43)The main thing was my left arm went numb after workout. So, I just assumed it was a heart attack. I also felt off-balance and uncoordinated and just feeling super weird and doomy. I never experienced this before. Again, I was thinking heart attack because of left arm, and stroke didn't even enter my mind. This was during COVID and I was teaching over Zoom at home so DH was not here. I called the ambulance and waited but by the time they got here pretty quickly the symptoms had resolved. They asked me to put the outdoor light on and unlock the door so they could get in. I did shower and rinse off which was probably not a good idea yikes but I didn't want to sit in damp sweaty clothes all day. I had them show me my ECG in the ambulance and I could see it was normal, so I figured I'd just get checked out and on my way and it was probably a panic attack just due to stress of COVID lockdown. When I was met in the ER by the doctor he said I was in a stroke protocol which I was genuinely shocked. So I had all kinds of tests that don't show anything (carotid ultrasound, heart echo, CT scan, MRI) when it resolves so that was good and I came home the next day. DH could at least visit with me for a couple of hours and I had an observation room by myself. I have to take a statin and baby aspirin. Fortunately, no repeat of this.
