Comments (25)Stir-fry is a great way to cook veggies. Less time they're cooked the better! Roasted red bell pepper soup is simple and delicious. You can make it a little more decadent with the addition of cream and cheese. This is Sharon's (Chase) from the Cooking forum: ROASTED RED PEPPER SOUP 4 red bell peppers, roasted, seeded, and peeled 2 tablespoons butter 1 red onion, chopped 2 garlic cloves, minced 4 cups chicken broth 1 lemon juice salt and pepper, to taste Saute onions and garlic in butter until soft. Add red peppers. Cook for 2 or 3 minutes. Add broth, cover and simmer for 20 minutes. Add lemon juice. Process in food processor until smooth. Season with salt and pepper. An oval #2 will hold 1 lb. or brown sugar. A square #1 modular mates will hold 2 lb. of brown sugar. A good tip is to place a piece of fresh bread in the modular mate with the brown sugar for 24 hours, remove after 24 hours. The moisture from the bread will keep the brown sugar soft. Comments (30)[Bellaflora, that's my bed under the window. It's a walnut Empire-style daybed with scrolled ends from about 1830, and it's only 24 inches wide, but I've been sleeping on it since 1977. I was just out of college & just starting my first job when I spotted it at an antique show, and the $240 it cost me seemed like a fortune. I had to eat macaroni-&-cheese for weeks to repair the damage to my bank account, but, hey, it was worth it. The brand-new furniture that my pals were buying during the same period all went to Goodwill--or a landfill--a long time ago, but I figure my bed has at least another 50 years left to go. Anyway, the writer who came to my apartment to interview me for the O at Home article had the same question you did--"Where's your bed?" When I told her I was sitting on it, she paused, glanced at her hands, and then said, "Well, it's a really nice piece. Comments (17)Well, that's a concept. If you shred your own cheddar, you won't have to figure out how to store the annoying bags. About a month ago, I started revisiting how I eat and what I eat. So many posts on this forum talked about actual cooking, how and where folks are going to store and eat actual food. My DH travels a lot at the moment, and I realized my food consumption had devolved to pastries, wheat thins and cheese, and...if he was home, some protein and veggies at dinner. My diet was balanced because I ate several kinds of pastries. :) I've been sober for seven years, but I realized my eating was totally addictive and mindless. Physically I'm pretty active with our little "ranch", so that helped counterbalance, I think, but I began reworking the other side of the equation, what and how I eat. Our CSA started back up at just the right time. Anyway, after beacham's condiment post, I cleaned out our refrigerator and noticed the cheese kind of sprawled out on the top shelf, being ignored.
