Comments (7)Potential density problems with that one. It uses 1/4 cup flour plus dry mustard and prepared mustard both of which have additional thickeners. They may have "tested it" but that was likely for flavor not processing safety. Hard to know for sure if 25 mins BWB is sufficient. Probably is but no way to know for sure. Since it is straight undiluted vinegar I'd be comfortable with the 2 mustards added but I'd leave out the flour. I'd add it after opening the jars or use Clear Jel (the only approved thickener). Comments (11)Dcarch I hadn't thought about the relatively slight difference in temp for artichokes steamed and cooked SV. I was hoping that avoiding the loss of flavor into the water would be a significant difference. Water even under steamed artichokes is fragrant and green. Maybe I'll try SV again with small and very fresh 'chokes. And I'll be MUCH more sparing with the lemon. I routinely SV fish, lamb, beef, and venison, and the meats are always interesting and usually just flat great. I just discovered the SV Kitchen site as I searched for SV artichoke recipes and quite like it. I think this Saturday I will try their recipe for Chickpea Soup with Shrimp and Chorizo. Never considered soup in the SV. You have been my inspiration and resource more often than you can imagine. Because of your information, I am seriously considering putting together an inexpensive and easily stored SV system I can use in smallish saucepans or small coolers. Cranking up the Supreme for four eggs is a bit much. I would love to know which other forums you might recommend. Becky Lompoc, CA * Exported from MasterCook * Company Chicken-Artichoke Bake Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup butter 6 skinned and boned chicken breast halves 1 cup chopped onion 1 clove minced garlic 3 tablespoons flour 1/4 teaspoon salt 1 1/4 cups chablis 1 cup chicken broth 3 ounces cream cheese 14 ounces artichoke hearts -- drained 1 pound sliced mushroom Melt butter in a large skillet over medium heat. Add chicken, and cook 5 minutes on each side or until browned. Remove chicken from skillet, reserving pan drippings; place chicken in a 2-quart casserole. Set aside. Saute onion and garlic in reserved pan drippings until tender. Add flour and salt, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add wine and broth; cook over medium heat, stirring constantly, until mixture is thickened and bubbly. Add cream cheese, stirring until cheese melts. Remove from heat; set aside.
