Do you remember those Snackin cakes mixes from the 70s?

I think it was the 70s anyway. I was wanting one piece of chocolate cake yesterday, so I looked up a small cake recipe for just an 8 inch pan last night. I went out and bought some cocoa, which was odd. All of the cocoa boxes were covered in cocoa at my local Walmart. So, then I started to get a bag of it, organic, but when I grabbed the bag a plume of cocoa came out of the top. I went back to the Hershey's in a plastic "box", checked to make sure the seal was good on top and bought that one.


So, came home and added cold brew coffee to my mix instead of water and some chopped wal-nuts. No eggs, so I did taste test the batter, which was really good. It called for 1 cup of sugar but I used maybe 2/3s of a cup. Probably not going to make any icing, although I do have butter and powdered sugar if I change my mind.


Do you remember those little mixes?


I also bought a cucumber and mushrooms. Yesterday my daughter and I ate at a little hole-in-the-wall diner, called Cliffside, in the capital city. It's right on a busy road next to a rock wall. I've driven by for many years but never stopped to eat there. We split our meals, I got a bbq burger with fries and she got a pimento cheese sandwich with a cucumber/pasta salad. The salad was really good so I duplicated it, a little. It was made with different type of pasta and what tasted like Italian dressing. I used Sun roasted Tomato Vinegarette. It's so good. Used tomatoes and red bell pepper from my garden.


I also made smothered pork chops with onions and mushrooms for a late lunch. I don't normally make things with gravy but the last time I made something with these pork chops it was so dry. Anything good cooking at your house?
