Do you remember those Snackin cakes mixes from the 70s?

I think it was the 70s anyway. I was wanting one piece of chocolate cake yesterday, so I looked up a small cake recipe for just an 8 inch pan last night. I went out and bought some cocoa, which was odd. All of the cocoa boxes were covered in cocoa at my local Walmart. So, then I started to get a bag of it, organic, but when I grabbed the bag a plume of cocoa came out of the top. I went back to the Hershey's in a plastic "box", checked to make sure the seal was good on top and bought that one.

So, came home and added cold brew coffee to my mix instead of water and some chopped wal-nuts. No eggs, so I did taste test the batter, which was really good. It called for 1 cup of sugar but I used maybe 2/3s of a cup. Probably not going to make any icing, although I do have butter and powdered sugar if I change my mind.

Do you remember those little mixes?

I also bought a cucumber and mushrooms. Yesterday my daughter and I ate at a little hole-in-the-wall diner, called Cliffside, in the capital city. It's right on a busy road next to a rock wall. I've driven by for many years but never stopped to eat there. We split our meals, I got a bbq burger with fries and she got a pimento cheese sandwich with a cucumber/pasta salad. The salad was really good so I duplicated it, a little. It was made with different type of pasta and what tasted like Italian dressing. I used Sun roasted Tomato Vinegarette. It's so good. Used tomatoes and red bell pepper from my garden.

I also made smothered pork chops with onions and mushrooms for a late lunch. I don't normally make things with gravy but the last time I made something with these pork chops it was so dry. Anything good cooking at your house?

Nothing cooking right now, but you reminded me of microwave mug cakes. I was on a roll with those for awhile - my go-to was maple blueberry vanilla, but I have some chocolate mug cake recipes I haven't tried yet.

Funny, I made breaded and fried pork chops just today for lunch with gravy. I have not made them for many MANY years! So good! But kind of a pain to make with all the breading and frying, so very messy and lots of clean-up. I think it was worth it though :)

I have made those microwave mug cakes, they do taste good! I remember a little cake mix that even had a little "pan" included in it. It's cute, my niece made her Daddy one for his birthday when she was a little girl. We still have pictures of it and she was so proud of herself!

I love beets. Especially ones fresh from the garden then roasted. Then there's Harvard Beets and pickled beets. I've been craving roasted brussels sprouts, but neither husband nor dd like them...dd used to, but now she's so anti-mom she's sworn off lots of stuff she used to like. Grits I learned to like when I was in Grad school in Billsburg, VA. I liked to go to the Chickahominy House to have a Virginian breakfast: eggs over easy, a slice of Virginia ham and grits, with a buttermilk biscuit. You could have redeye gravy, but I preferred to smush my eggs into the grits. Then there's egg/cheese/grits casserole. Cornbread is best slathered with butter, or drizzled with honey. I rarely do both anymore, but I used to. I brought rolls for the trip to MI to have Thanksgiving. I was up until 2:00 am on Thursday making them. I intended to make whole wheat "brown and serve" rolls, but I didn't hear the timer ding, and so in a panic, I baked them completely so I could taste test and make sure they were edible (they were, although some were big enough to be hamburger buns). For the young fry I made PIllsbury crescent rolls...as I know that dd and others prefer those. On the way home today she was munching on one and said "Oh, what is is that makes crescent rolls so yummy." "in a word," I said, "lots of fat." I have to say that driving up to Hastings, MI on Thursday morning was wonderful. A typical Michigan Thanksgiving day--misc. flurries and the sun breaking through glowering clouds over golden and russet fields which had been lightly frosted with a diamond dust. Breathtaking.

If you like moist, rich, almost-custardy, almost-black foresty chocolatey cakes with cherries, here's a winner: CHOCOLATE-CHERRY MASCARPONE BUNDT CAKE Serves 16 Ingredients 2 sticks butter 1/2 cup cocoa 3/4 cup water 2 cups granulated sugar 1 cup mascarpone cheese 1 Tbs vanilla extract 2 large eggs 2 cups all purpose flour 1 tsp baking soda 1/2 tsp salt 1 can cherry pie filling Glaze 3/4 cup chocolate chips 1/4 cup heavy cream 1/4 cup good dark brewed coffee 1/4 cup light corn syrup 1 tsp vanilla extract Directions Grease and flour a 10-12 cup Bundt pan. Heat oven to 350Â°F. Melt butter in a large saucepan over medium-low heat. Add cocoa, stirring until smooth. Whisk in the water and remove from heat. To the warm cocoa mixture, add the sugar, mascarpone, vanilla and eggs. Whisk until smooth. In another bowl combine the flour, soda and salt. Add all at once to the first mixture, whisking until well blended. Stir in one can of cherry pie filling. Pour the batter into the prepared pan. Bake for 1 hour, or until it feels firm to the touch and has slightly pulled away from the sides of the pan. Cool in pan on a rack for 20 minutes. Carefully loosen the cake with a knife and invert onto a large plate. While it is cooling, warm the milk/cream, coffee and corn syrup on medium heat until it boils. Remove from heat. Add vanilla. Zalco, I haven't been to Terun, their crust looks delicious! Thanks for the rec. FYI, I don't consider Round Table to be great pizza, but it's close to my house and nostalgic. Pizza Delfina is really good and Vesta in Redwood City is where I go for creative toppings. Now that I think of it, Menlo Park doesn't have any great pizza places but I live in the next town over so if I'm lazy it's there or Redwood City. I grew up in Palo Alto and love to reminisce about all the great restaurants up and down El Camino, University Ave. etc. that are now gone. It's amazing that Round Table is still going strong. I especially miss the "old" Mings before they switched to mostly dim sum. I think we went out for dinner more than a lot of families. I could name 50 restaurants from Mt. View to Menlo Park that are now gone. I miss the good old days! I bought a small pizza oven but making the dough from scratch seemed more trouble than it was worth. Never tasted as good as the better pizza places.

I remember the Snackin cakes, sure were a lot easier and just the right size for us kids. (I also remember Shake-a-Puddin’ that we brought to school in our lunchboxes. Always a lineup at the drinking fountain for water to make it.)

Nothing coolong here. But. I go for weekday brunch/lunch often with a friend. I’ve ordered crêpes a few times, but it is always just a pancake rolled up with filling. But yesterday we went to a French cafe. Ordered savory crêpes made at an actual crêpe station. THAT was a crêpe.

We hosted a couple of teenage French boys one summer. One boy’s family had a restaurant and he wanted to make crêpes for us. so I went to Williams-Sonoma and bought the pan. His were good! For years after we used the pan to make, well, maybe not crêpes, but Swedish pancakes (which my Danish grandmother called Danish pancakes and we called ”delicate thin pancakes” after a hotel we stayed at in Montréal in 1967. Yes, for Expo) The pan lasted us for 25 years, we just tossed it.

bpath, for years I made homemade seafood crepes for Christmas dinner. They're so labor intensive that the last time we had them I made my grown kids help.

My current crush is all about fresh tomatoes/homemade pesto and a good crusty baguette. Raspberries are coming in fast and furious too. Can't beat fresh berries made into Raspberry Glace pie.

I made a keto loaded cauliflower casserole for a dinner party on Sunday. It is one of those recipes that you don't have to follow exactly to have success. That's my favorite kind of recipe. My guests said it smelled delicious while it was cooking and enjoyed the flavors.
