How long - Opened can of tomatoes

Happy summer all -
I am making a small batch of caponata this morning. I realized I have some canned tomatoes in the fridge that I opened for the last batch I made just over a week ago. I put them into a sealed container right after opening. They look fine but I always wonder where to draw the line. I am somewhat conservative with meats or fish. What is your comfort level with canned tomatoes?

Comments (3)Once the jar is opened the manner in which it was processed - BWB or pressure canned - becomes irrelevant. The shelf life is determined primarily by the particular food and how it was prepared (the recipe used) rather than how it is processed. Temperature maintained in the fridge also is important. Below 40 gives a longer storage life than above 40. The lower the pH of the jar contents the longer they can be stored in the fridge. So for example, sugared fruit jams last longer (1 year) than low sugar jams (4-6 mos.) or pickles, pickles will have a longer shelf life (3 mos.) than say salsa or tomato juice, tomato products (1-2 weeks) will last longer than green beans or other vegetables, (days) etc. It is the pH, the acidity of the food in the jar, that counts. But pickles made with straight vinegar will have a longer shelf life than those made with 1/2 water and 1/2 vinegar because of their pH. OK? Comments (4)That I will do. What a spectacular tomato year it was/is here, despite drought. That is, if a person irrigated their vegetable garden. Dry conditions meant very little blight and disease. Even those who watered with sprinklers reported very little disease. For those who didn't water, they lost out. I've never had a year where tomato plants are just as green as can be after harvest. I believe these plants would have kept om producing had we not had day after day of 100(+) degrees. 70 - 100 pounds each day for 3 weeks streight off only 22 plants, I'm not complaining one bit! Comments (8)I don't know if this is the official "right" answer, but here's what I do. . . 2 or 3 hours after I take anything out of the canner, I check the seal by gently touching the middle of the lid. If there is any give, I know that that jar has not sealed. So I take my sharpie and put a little dot on the lid. The next night (I do all my canning in the evening), when I take off my rings and wash my jars, any jar that has a dot on the lid, I check those jars extra carefully for the seal. Anecdotaly I have found that if a jar doesn't seal within an hour or 2, most likely it isn't going to seal. Comments (6)I use a Food Saver and store the tomatoes in the deep freeze - not the one in the fridge. They keep a very long time - up to two years in the deep freezer. They taste as good as the day I put them in. In the fridge freezer, you can keep them about 6 months if you also wrap the bag in freezer paper to protect from that constant freeze/defrost cycle. Now that your tomatoes are already frozen, you can move them into the better food saver type bags for long term storage. I usually freeze in quart size containers and then transfer to the food saver bags so that moisture isn't an issue with the machine (you'll understand once you read the manual). Walmart has a good price on the Food Savers and the bags as well. Check the reviews at Amazon on different models before you buy....See More
