Veggie "Condiments"?

Do you make stuff to use as bread spreads or similar? Sauces or purées or jams or relishes?


It started last Fall when I made a "Moroccan" carrot salad/dip recipe that I made for the crudite at Thanksgiving. The cousins said they liked it, but when I made it again, they didn't eat much of it. I love it! And used the leftovers in sandwiches, etc. Or sometimes just ate it with a fork. This is a textured thing, not smooth like a true purée, but can be used them as way as one.

On TV, they talk about onion jam. I'm not particularly fond of added sweet in onions. It's a pain, but I can caramelize onions without any sugar. I was thinking I'd like a jammy caramelized onion goop. I could make it in the slow cook. It could be awesome! If you have any cooking/recipe suggestions, I'd love to hear them.

Awhile ago, I bought a bottle of "garlic sauce" which is basically an aioli or mayonnaise but more burger level than fine dining. I was wondering how they dealt with the garlic bacteria oil thing, if blanching or pasteurizing the garlic was sufficient. It didn't taste particularly cooked. It was good but not good enough to buy regularly. If I felt confident about doing it safely, I'd make smaller batches.

Then there's cauliflower. On TV, all over the place, they make cauliflower purées. I thought I could do something similar to the carrots, but more of a parsley or other herby kind of direction. But not a cream base or anything.

Would beets work? Or be too sweet? Too messy? I'm not sure they'd go with enough stuff though. Better maybe sliced beet sandwich with onion jam, right?
