Weird wall in bathroom

I have this weird wall in my 1971 hall bathroom that is to the left of an 18" vanity. It juts out from the main wall about 5 inches and is about the same thickness. It currently has an outlet in it, which can be moved to the same wall as the vanity. How thin can I make this wall if I demo and cut it back to be flush with the other wall? It's not load bearing, it's just an odd partition. Ideally, I would like it to be about 2" less thick so I can fit a 20" vanity. Gas wall heater will be removed soon.
