Your suggestions are only making a bad situation worse. Instead of reusing misplaced electrical outlets, move them; it's not that difficult. Use recessed ceiling fixtures instead of sconces, surface mounted and pendant fixtures. You shouldn't see the lighting in a kitchen. If there is a hood over the stove, an overhead light would only be blocked and reflected by the hood. But the first thing I would do is redesign the kitchen even if it meant some new or reconfigured cabinets. Keep the peninsula, put the sink at a window and the refrigerator should be more convenient to the table. Create a work space between the counters.

I make 2-3 slaws and shaved salads every week. (bagged and un-dressed). LaborDay i had 4 bowls for 4 different salads. After initial quick wash/prep, it is about 5 minutes shreeding. Laying 2.5 inch carrots, cucumber, and celery flat-stacked, i get shaved veg that curl in ice water, etc. (cucumber does no curl). Quick one-off small salads i just use my mandolin.
