I would probably match the countertop in this case.

It would be helpful to know the color scheme of any adjoining space for the best reccomendations. Here’s some inspo pics that I think could work well in your kitchen.

The patterned tile would bring in the deeper tone of your gorgeous wood floor onto the wall. The leftmost photo leaves the tiles very pale and neutral like your countertop, as palimpest suggested, and the photo with the black countertop shows a short backsplash of the countertop material with painted drywall above in a very neutral white.

Your cabinets are oak not maple.

I would like to see the whole space and IMO a big declutter will let us see the whole space . I think in this space right now the same bacsplash as the counter material since your range has back plate nothing is needed there After looking at the pic again I think this is the whole space maybe. From what I can see you need storage big time so maybe a nice pantry cabinet or some piece of furniture you can use for storage and of cours at sometime a counter depth stainless fridge with no stuff attached .

I agree that a white subway that matches the counters would be a good choice for a backsplash.

If you clear everything off the fridge and get a small tension rod and cafe curtain for the open shelf that would get rid of at least half of the visual jumble.

As mentioned above, we would need to see the rest of the space to suggest a wall color. A blended backsplash tile might be a better choice to tie together the floors, cabinets, counters and the rest of the space but it's hard to say without seeing the big picture.
