Comments (19)This is a delicious light recipe. The first time I made it, I followed the directions but the boneless chicken breasts came out dry. The next time I used bone in, skin on breasts, poached them in the sauce, took them out and took the meat from the skin and bones and added the shredded meat back to the sauce. I also subbed chili powder for the cayenne pepper. Also, rinse and drain the black beans. Serve on rice. Garnishes: shredded cheese, scallions, fresh cilantro, chopped avocado, light sour cream, lime wedges. Comments (16)We host a Christmas Day dinner party every year and I like to have a number of easy appetizers out when our guests arrive. Green Chile Roll-ups always go over well and are quick and easy to make: 1 8oz package cream cheese (will NOT work with the whipped or soft versions!) 1 4oz can of chopped green chiles (we prefer Hatch brand) 4 TBS diced red bell pepper garlic powder and salt to taste 4 large flour tortillas Stir together softened cream cheese, green chile and red bell pepper in small bowl. Add garlic powder and salt to taste. Spread mixture over one side of each tortilla and roll up. Wrap rolled tortillas in plastic wrap and chill for at least one hour in refrigerator. Slice into 1/2" -1" slices and serve. I made these Ultimate Party Meatballs this year for the first time and they were a huge hit . . . and so darn quick and easy! 1 14-ounce can Ocean Spray Jellied Cranberry Sauce 1 12-ounce bottle Heinz Chili Sauce 1 2-pound bag frozen, pre-cooked, cocktail-size meatballs (I made my own meatballs ahead of time and froze them until I needed them for this recipe) Directions: Combine sauces in a large saucepan. Comments (23)Diane, our 'op', needs to make this Thursday for Sunday, or Sat for Sunday. A dip i would make Saturday...something baked i would make Thursday and freeze...bake 75% of its cooking time. Take frozen and pop in the host oven for 20 min on a lower rack on a jellyroll 1/2 sheet pan. (i have a couple steel/iron cookie sheets that bake hot). Horrid for cookies. Any sheet pan on the lower part of an oven will take care of any soggy moisture...and any toppings on puff pastry or philo should be pre-baked before topping...like cherry toms, eggplant, etc. Get the moisture out by half at least. Asparagus will hold up fine. Caramelized onions i saute up a bit dry...i have good luck sautéing mushrooms low and slow with onions if i'm making them for a tart. Or a low roast if i'm roasting garlic and other ingredients like red pepper and root veggies. A dinner for 6 among friends is fun to try something new. A fail is no biggie but easy and less stress if making for a veggie crowd. I find they love something new. (i took in my garden carrots to work in bouquet form and took them to various departments..."OMG...i had no idea a carrot could be so good!"...lol) For 6 i might make my spring rolls...shop and prep Thursday...assemble all the do-aheads Sat....the sauces...roll them up the hour before heading out the door Sunday...but i've made them a thousand times and 10-12 spring rolls is easy for me. Comments (12)Side dishes for vegan are pretty simple as they are usually plant products. Vegans, as opposed to vegetarians, are typically not ok with any animal product including cheese, milk, butter and even honey. Look for things like Trader Joe's quick cooking farro or harvest grain blends. You can always do oven roasted veggies of any sort with olive oil or peanut oil, salt and pepper and whatever spices or herbs you'd like. Tossed salads are great with any veggie you want, some seeds or nuts for interest and a vinaigrette dressing is perfect. (Lately I've been into dried cranberries and walnuts on my salad. Delish.) (Recipes from Lean, Luscious and Meatless) You could make Chick Peas Italiano. It's tasty...don't let the name stop you...and filling and you won't miss the meat. 1 Tb + 1 tsp veg oil 1 1/2 c. onions in large chunks 1 1/2 c chopped green pepper in large chunks 2 cloves garlic minced 1 1-lb can of chick peas rinsed and drained 1 1-lb can of tomatoes undrained and chopped 1 8oz can tomato sauce 1 ts dried oregano 1 ts dried basil Heat oil in large nonstick skillet over med heat. Add onion, pepper and garlic. Cook about 10-15 min until onion is lightly browned. Add remaining ingredients, mixing well. Cover and reduce heat to low and simmer about 20 min. Serve over noodles or rice. I usually add a splash of tabasco sauce for a little heat. I've also added mushrooms and/or spinach for a little more body and flavor. ============= I've also enjoyed Mexican Pot Pie Filling: 1 Tbs veg oil 2 cloves minced garlic 1 c chopped onion 1 c chopped green pepper 1/2 c thinly sliced celery 1/2 c thinly sliced carrots 1 10oz pkg frozen corn, slightly thawed 2 c canned kidney beans, rinsed and drained 1 1/2 ts ground cumin 1 1/2 ts chili powder 2 8oz cans tomato sauce 1 Tbs cornstarch Corn bread crust: 3/4 c + 2 Tbs corn meal (4 1/2 oz) 1/2 c + 2 Tbs whole wheat flour 1 ts baking powder 1 c water 1 Tbs + 1 tsp veg oil 1 4oz can green chilies, drained Prepare filling: Preheat oven at 350. Lightly oil or spray 9x13 baking pan. Heat 1 Tbs of veg oil in large nonstick skillet over med heat. Add garlic, onion, green pepper, celery, carrots and corn. Cover and cook until vegs are tender, 10-15 min. Stir occasionally and add a few Tbs of water if needed. Add remaining filling ingredients, stirring the cornstarch into the tomato sauce before adding. Bring to a boil and then spoon into prepared pan. Prepare crust: In a small bowl, combine cornmeal, flour and baking powder, mixing well. Combine water, oil and chillies and then stir into dry ingredients, mixing just til moistened.
