Comments (11)I agree with chi83 that falafel and hummus are good choices, but egg rolls are not vegan unless you substitute rice paper or egg-free pasta for the traditional wrappers. You can also make Vietnamese style lettuce wraps and omit the fish sauce. Here is my recipe for a bean dip, which I developed while I was living in Texas. It was a big hit there: Texas Bean Dip Ingredients 1-1/3 cup dried pinto (or red) beans (about 2 cups cooked) 1/2 large onion, coarsely chopped 2 tbsp cumin 1 bunch of cilantro, large stems removed, about 2/3 cup chopped 1 can Ro-Tel tomatoes (10 oz.) or similar tomatoes, diced with green chilies, drained, liquid reserved 3-4 Serrano chilies, coarsely chopped 6 tbsp chopped fresh oregano (or 2 tbsp dried oregano) 1 tbsp vegetable soup base Place dried beans in large pot and cover with water to about 3-4 times original depth. Bring to a boil and boil for two minutes, cover, and remove from heat and allow to soak for one hour. Discard the soaking water and rinse and sort the beans. Cover with fresh water, with about two inches above the soaked beans, and bring to a boil. Cover and simmer for one hour, or until done, and discard the cooking water. Place all of the ingredients except the beans in a food processor and process until smooth. Add the beans, and check for flavor - you may not want to add all of them. If needed, add a bit of liquid from the canned tomatoes to aid in processing. I remove some of the seeds from the chilies - you can remove all the seeds, if you like it mild. Serve warm or cold with tortilla chips. These days I boil the beans with a few epazote leaves that I tie into a bundle so that they can be removed after cooking. This is a traditional way of cooking Mexican beans, and I do it partly because I always have a lot of epazote in my yard, and it also eliminates the need for cilantro, although I still add that as well if I have it. Comments (16)We host a Christmas Day dinner party every year and I like to have a number of easy appetizers out when our guests arrive. Green Chile Roll-ups always go over well and are quick and easy to make: 1 8oz package cream cheese (will NOT work with the whipped or soft versions!) 1 4oz can of chopped green chiles (we prefer Hatch brand) 4 TBS diced red bell pepper garlic powder and salt to taste 4 large flour tortillas Stir together softened cream cheese, green chile and red bell pepper in small bowl. Add garlic powder and salt to taste. Spread mixture over one side of each tortilla and roll up. Wrap rolled tortillas in plastic wrap and chill for at least one hour in refrigerator. Slice into 1/2" -1" slices and serve. I made these Ultimate Party Meatballs this year for the first time and they were a huge hit . . . and so darn quick and easy! 1 14-ounce can Ocean Spray Jellied Cranberry Sauce 1 12-ounce bottle Heinz Chili Sauce 1 2-pound bag frozen, pre-cooked, cocktail-size meatballs (I made my own meatballs ahead of time and froze them until I needed them for this recipe) Directions: Combine sauces in a large saucepan. Cook over medium-low heat, stirring until smooth. Add meatballs. Cover and cook for 15 minutes or until meatballs are heated through, stirring occasionally. Makes 30 appetizer servings. Comments (31)I reheated the "mini fritattas" in the microwave. I like them just warmed through. Here's what I do: Beat 10-12 eggs with a big splash of cream. Add salt and pepper. Pour into a 9x13 baking dish, prepared with non-stick spray. Add to egg mixture whatever you like or have on hand. Ham and cheese. Sun dried tomatoes and feta. Sauteed onions and peppers. In my example above, I had sauteed diced onions and garlic in evoo and seasoned with salt and pepper. Then, I added finely chopped Spanish chorizo and cooked for 5 minutes. That mixture was allowed to cool a bit and was added throughout the egg mixture in the baking dish. I also added shredded manchego cheese. Cover the egg dish with aluminum foil. Put the covered egg dish into a larger pan, and fill about 1/3 of the way with hot water. Place in 425 degree oven and bake for 40 minutes. Comments (19)Gorgeous plating with the honey HU+#'s !! As a guest simple is better. As a host I go overboard but I've hosted so many events over the years. Large and small. I do a big elevated board down my table for grazing. Prepped ahead platters so I can re-fresh easily... I think visiting your cheese shop would be not only fun for you but appreciated by your friends and host. Three or four cheeses, cornichons, olives, nuts. From my experience cheese shops are very friendly and accommodating making suggestions. They should have crackers, etc. If I include a cured meat I prefer to just get a small amount sliced paper thin. Most cheese mongers have charcuterie. For easy transport, choose a platter that will hold a few small containers in the middle for nibbles. Cheeses on one side with maybe some grapes, cherry tomatoes. I like to separate/arrange the crackers on the other side away from the moisture of the cheese. Crackers get soggy rather quickly if prepped ahead stacked in rows touching the cheese. I'm guessing the host has a plan in place already so no need to go overboard. A small Artisanal cheese tasting is always appreciated since we don't often splurge on them ourselves at home. Humbolt Fog, (a personal favorite), Goat Gouda, a mild creamy gorgonzola, a soft style goat log...rolled in herbs. Variety. Or any recommended above. What I don't really like as a host is a packaged app or bag of things I need to heat or find another tray or something sloppy in a foil tray plopped on my serving table.
