Comments (1)We live in SoCal so our weather is a bit different. We didn't use steel studs so I can't help you there. But we are using an indoor refrig. The unit sits 2 inches off the ground on slats, there's a slight overhang on the countertop so it's pretty much protected. We had a friend who did the same and their refrig lasted 10 years before the rust started getting bad. Comments (10)Thanks for the additional thoughts and comments. It hadn't occurred to us that our older relatives may not enjoy tacos, so we will talk about that before we finalize the menu. I like the grilling idea, as well as pre-grilling. If we go that route, we would definitely need someone to handle that piece for us, as we would prefer to spend time with guests. Loose meat sandwiches would be fine, too. I'm okay with cold sandwiches, but hubby is not for some reason. We have the venue for only for a few hours, so people can't really linger. We have a reasonable amount if cleanup time after, but that's about it. If there is not another event after us, we can probably stay, but we won't know that until a few days before. It really is gorgeous so I know people will enjoy it. Would have preferred to have it at our house, but we live in a hard-to-find location and even with step-by-step driving directions in hand, our visitors usually call along their way. We would have to hire someone just to man the phone! I agree that it is the grad's party and we will do everything we can to accommodate his desires with our time frame and budget. Step-son is pretty easy going and has told us whatever we want to do is fine. His mom has offered to pitch in, too, so I think she may be getting dessert and some decor. Yes, Beth, I have a broken right ankle I am just now learning to use again. Hope to be walking (limping!) very soon. Comments (11)Yes, I think Jim got it too. With 25 diners, you could make several different simple meat dishes...a glazed ham, a roast beef or pot roast, a pile of grilled chicken parts. Easy sides. Maybe a big bowl of potato salad or mashed potatoes, one of rice pilaf, another of some noodle dish or other. A vegetable medley is always good, because people can eat those veggies they like and push aside those they don't. A "salad bar" so that people can build their own salads perhaps, with a few different dressings. My guess is that your Dad will be far more interested and involved in being the star of the event than he is in the food, but having a buffet with several choices for all can't miss. And, that style of serving lends itself to ahead of time preparation, leaving you to actually enjoy the party as well! Your Dad will only have a 70th birthday once, and you should be enjoying his party with him rather than holed up in the kitchen! Most importantly...do remember to take people up on it when they say, "if there's anything I can do to help..." Let people help, if it's only to assign one person to make some salad dressing, or another to help you do some dishes while you cook. Comments (30)Many times I don't come up with the right tone in voice/writing to express myself, and I can be easily misunderstood. I always need an editor, and I have lots here! Thank you all so much for "editing" the wording/potential interpretation. It helped enormously! DH was estranged from his kids for quite a few years, and all three of them suddenly mellowed a couple of years ago. They established a good, stable relationship and I want to continue that. Especially after the kids lost both their parents in 14 months, so I'm kinda sorta all they have left - scary thought :-) So, if they want to camp out, fine. They now know the rules (they absolutely, positively know what behavior their father would accept and what he would go ballistic about). They agreed that they are responsible for "their" guests. If it turns into mayhem and chaos, I have a stash of wine in the basement, I will sit with a glass in my hand, eat popcorn, and watch them clean it up, fix it up, or pay for it. I'm really looking forward to this celebration, and I'm not stressing at all anymore. Probably because I am the best (or is it the worst?) procrastinator in the ENTIRE universe, and I've started working on this early enough to think through the process.
