Smoked cinnamon - now what?

I saw smoked cinnamon and had to have it. Now, I don’t know why! i saw a recipe for cinnamon buns that called for it, but I was thinking more savoury applications. The first thing that came to mind was Moussaka or Pastsitsio. i would love other suggestions.

I make things that call for mace and I often sub it for nutmeg in savory recipes, but I'm not sure how that applies here.

So, my first question is what kind of cinnamon? Ceylon cinnamon has a soft, rather sweet flavor. Saigon (aka Vietnamese, Chinese, cassia) cinnamon has a hot spicy flavor, like the cinnamon red hots candies that used to be so popular. Second question is how smoky does it taste? If it's hot, it might be good in Five Spice powder where smoke can give it a kick, and will work in most recipes you'd use Five Spice for, If Ceylon (true) cinnamon, if it's noticably smoky, it could be interesting in milky things, like custards and creams, or buns, or vegetable purees.

Smoked cinnamon’s a new one for me. I know cinnamon’s traditional in various Middle Eastern dishes, but I’m not a fan of it in savory dishes. Not even a hint. The closest I’ll go is adding it to sautéed apples to serve with pork.

Gotta go look up smoked cinnamon.

I make Cincinnati chili with cinnamon. Here's a link to my recipe, except I add the beans to the chili while cooking and also usually use vegetarian crumbles instead of meat and serve it over macaroni then topped with cheddar, so more of a Chili mac. But I have done it with spaghetti too.

Hey Boxer--lovely pix. My favorite granite was the Mascarello. Golden Crema looks really nice, too. To answer your questions... Do you have windows in the kitchen, lots of light??? We have one window, above the sink, and the lighting will be replaced, as it is now a fluorescent box on the ceiling--yuck! We'll put in cans, as well as pendants above the island, and under cabinet lights. Or is the space heavy? Not sure... What style are you going for--traditional/old world What other colors are you using in the space? we have stainless steel, and the walls are painted a dep Ming red,with white accents. If we found a "perfect" granite, and it didn't agree with red, I am willing to sacrific my red walls (sniff!) Do you like drama or simplicity? The simplicity of elegance. Nothing fussy. I have been a lurker here forever...never posted. I know how hard it is to quit smoking. I smoke for over 20 years about 2 1/2packs a day. I quit 5 years ago. I had tried to quit several times but always went back. I quit by picking a date.I told myself that it was going to be hard but every day would be easier. I also read that when you quit smoking your body is over the withdraw from nicotine 48-72 hours after you last smoke. I told myself the first 3 days would be the hardest and after the 3 days it is all a mind game. I really believe that is what help me stop smoking is knowing that my body did not need the nicotine, that it was my mind. i did take a mini vaction from work, some people say they get very tired from not smoking.... The first 6 months are hard....you will give yourself every excuse to smoke again...it has been 5 years and once in great while i will still get the urge to smoke...I know I cannot smoke or even try to smoke...because I will be right back where I was. These all sound great! I especially like the sound of Annie's onion and garlic. One thing to think about is that cinnamon roll filling has sugar and fat, which are both liquidy while they're baked, and remain moist when cool. I'm guessing that savories would be better moist as well, and I'm thinking adding onions, mushrooms, cheese, egg yolk, or a vegetable puree to something dryer, like chicken or fish, would make it much better. Also, to contrast with the natural sweetness of the bread, I think IC is right on the money with salt. I remember seeing a pastry similar to that in France, but flat rather than rolled, which had a ham salad inside (salty). Mushrooms and scallions. Chicken Divan (made on the dry side--moist yes, sopping no). Smoke salmon, dill and a little sour cream. Roasted vegetables minced with ricotta (and salt!). Braised shortribs meat with a bit of the sauce.

welcome to the forums dave.. if you are going to hang around.. add your location on your member's page ... and if you dont think that is important.. i cant really tell you when its going to resprout .... e.g compare sara's z9 to my z5MI .... anyway ... i am pretty sure you could run this over with a cement truck and not kill it.. so stop worrying about that ... and with no insult to the root mass ... i would expect it to be back to the size you cut down.. in a year or 3... depending on location ... you might want to think about removal.. next time it tries to take over the yard ...unlike children.. you dont have to keep problem plants ... lol... unfortunately.. i dont remember if they bloom on new or old wood.. someone else will have to tell us if it will bloom this year .... so.. at worse.. you lose this years bloom ... ken

Pastitsio for sure! I often add smoked salt or paprika to dishes to up the umami factor.

There's a somewhat elaborate recipe for a Morrocan chicken pie @ MarthaStewart.com that's been on my radar - I'll bet it'd work for that...

My DSS puts cinnamon among other things in the rub he uses on beef, particularly steaks. Sounds like a good place to use smoked cinnamon!

pulled pork ... grind it to powder and add to butter (perhaps a teensy bit of sweet too) for spreads ... sprinkle on deviled eggs. Experiment.

If you don't have mace, leave it out. No one will be the wiser. With these spice mixes you usually have a lot of leeway, the dish isn't ruined if one of them is missing. It's just slightly different. I like that Cincinnati chili recipe precisely because of the unusual and varied spices. YMMV. FWIW, my mace is probably 20 years old, so even if I do add it, it's probably just a perfunctory gesture!
