Help with "breakfast" bread pudding?

My "good" freezer had a hissy. I had a lot of non-loaf bread in there--pretzel buns, croisssants, naan, pita. While the meat and cooked foods made it into the fridge, the breads had to be lelft to thaw, and some became damp in the process, so I tore them all up for bread pudding. Should be awsome bread pudding. I have some stone fruit that got forgotten in the mess, so I thought I'd make a peachy one, but there's a lot of bread, about 9 quarts, including a lot of air.


So, since a lot of cooked bacon and sausage also got thawed, I thought "breakfast". bread pudding. Kind of like french toast and breakfast meat casserole, right? But I can't figure out how to flavor it! I've made plenty of savory bread puddings, but they had herbs or other flavors that went with the ingredients. Maple syrup would be cloying and I try to keep it away from the meat just on a regular diner plate. Berries seems weird. So, I think no sweet is best.


S&P? But the sausage has both, strongly, and the bacon is salty and full of umami.


Mushrooms? That might be okay, getting all the water out means I'd need to sauté some 3 pounds to make enough, and I don't want to work that hard. If you think it's a really good idea, I could do it. There are store packed sliced mushrooms (one hopes cleaned) for a couple dollars less per pound than whole organic cremini. Still pricy. I can afford it, but do I want to?


Onions/shallots? I have shallots that need using... Maybe crisp them? Will they stay scrips in the custard? Put them on top?


Chilis? I have anaheims, jalapeños and serranos, but would they overpower the savor goodness of the meats?


Spices? I can't think of any that would go... Epazote? It would taste good, but, again, would it be a distraction?


I'm too tired to think it through. Hopefully by the time it's made, the freezer will be freezing again...
