ISO the “Right” Enchilada Sauce Recipe

Often enough I make enchiladas en casserole as a homey quickie dish with bottled sauce. I can find the ”right” flavor in a bottle, too. When I use ”convenience foods” like jars and spice mixes, it's just that. Convenience. I know how to do the same from scratch, or have a recipe, or can look one up.


NOT SO the Encilada sauce. I can't find the right one. It's not too specific, so I hope you all can help me.


Requirements:

  • No (or very little) tomato
  • Red chiles
  • Cumin so you can taste it
  • Good rounded flavor in general
  • Body, but thin enough for the excess to drip off the tortilla as required (viscosity about like EVOO)


I don't can, so if it's a big batch, it has to freeze well, but I'm willing to cook for days, if I have to, to get it right. I need an enchilada sauce I can feed to company.
