Will Classic gray look more gray or beige with my granite?

We are repainting every inch of our home and have narrowed the whole house wall color to be swiss coffee, calm, or classic gray. Classic gray was my last choice but we are suprised a swiss coffee samplize sticker looks pretty yellow in a lot of our rooms/lighting, and we are seeing pinky/purple in calm in some places. CG seems like the most neutral, however I do NOT want to paint the whole house and it appear ”gray”. And I also dont want it to look too yellow/beige. I want it to read just neutral with a visible difference/contrast to a bright white trim. I’ve read tons of conflicting opinions about which trim color: chantilly lace, white dove, simply white. Whichever we choose for trim will be the cabinets and all ceilings, too. I’m worried we arent picking a white that looks goos woth the classic gray and also our existing kitchen granite and backsplash and medium brown hardwoods. Please give me advice on which color combos might work best in our space.
