ISO best quarter sheet pan

I need to purchase some new sheet pans for my small oven. I have a viking 8 burner stove with a large and a small oven. The 9x13 pans just fit in the small oven, if there is no overhang on the lip. I had been using Baker’s secret small baking sheets, but all my baked goods, like pastry appetizers, always burn on the bottom almost right away. I checked my oven temp, and it seems ok. I think it’s the pan. I did a bit of research and the NordicWare aluminum rolled edge had the best reviews I found, but our local restaurant supply has Winco brand. Those are commercial grade. My mom, who is an excellent baker, always told me that shiny pans baked the best cookies, but I have used Silpat with great results so I haven’t been concerned with the finish. USA pans also have great reviews, but I have never seen them here. I think Amazon has them.


I should also add that I really don’t care if one costs less, I just want good results.
