Homemade crackers

Is anyone into making their own crackers? Last week I made crackers for the first time. They're fun to make. I loved working with the warm water dough and was very pleased with the results. After making them twice in one week, I bought a perforated half sheet pan, so I am committed to making them regularly and trying other recipes. I'd like to try a cheddar cheese cracker next. Do you have any favorite cracker recipes to share?

This is the recipe I used. I'll add the link but this is my tweaked version and it's half the recipe. It makes about thirty 2x3" crackers. I served them with hummus for Super Bowl but they're also great on their own.

Parmesan Sesame Crackers

1 c. flour (120 grams of King Arthur flour)
3 tablespoons finely grated parmesan cheese
1 tbsp. poppy and sesame seeds (eyeball it)
1/2 tsp. baking powder
1/4 tsp. salt (I use a rounded 1/4 teaspoon.)
1/4 tsp. sugar

1/4 tsp. garlic powder

1/4 - 1/3 c. warm water (I haven't needed the full 1/3 c.)

2 tbsp. + 2 tsp. oil

(You can use garlic oil made by sauteing chopped garlic in the oil in the recipe and straining the oil. I topped my first batch of crackers with Everything Bagel mix but didn't care for the toasted garlic flakes in it.)
Topping:

Sesame seeds, poppy seeds, parmesan cheese, coarse salt

Stir together the flour, parmesan, seeds, baking powder, salt, sugar, and garlic. Stir oil into warm water and add to the flour mixture in small amounts. Work into dough as you would a pie crust.

Don't try to roll these out on parchment paper--it slides around. Dust countertop with 1 tbsp. of flour. Dump dough onto counter and knead about 10 times. Form dough into an oblong and pat it flat into a rectangle. Roll out into a 9 x 12" rectangle, about 1/8" thick. Lift dough as you roll it to prevent sticking.

Pick up dough and place on parchment paper. Reshape but don't worry about making a perfect rectangle. Brush top lightly with a little oil. Sprinkle additional sesame seeds, poppy seeds, parmesan cheese, and coarse salt over dough. Go light on the salt. Press topping lightly into the dough.

Place on cookie sheet and score into 2 x 3" rectangles. A pizza cutter works well. Prick crackers with a fork. Bake at 400 degrees for 15-18 minutes. Crackers are done when they are uniformly golden brown on top and bottom. Watch carefully the last few minutes. Remove any outer crackers that are browning faster.

If crackers aren't crisp enough, they can be recrisped in the oven.
