Kitchen Counter tops

4 years ago we built our retirement home in the White Mountains of AZ. its pretty much a Houzz house except for my counter tops in the kitchen. When our contractor stole $77,000 from us we ran out of money to finish the kitchen. i couldnt afford a granite or quartz counter top so we went cheap and put in butcher block. it was a cheap choice and now it is buckling right by the dishwasher, I suppose from the heat. It needs to be replaced., my problem is I will have to buy a second slab for $2300.00 to do this 3 feet of counter top.(pic below). Since the slab comes in 55 sq feet that is a lot of waste and expense. Any suggestions of what I can do with this small space that wont cost me $2300?
