Like gardengal, I sit if I'm peeling a bushel of apples or snapping a 5 gallon bucket of green beans, but for regular food prep, I stand.

There is no where in my house where I could sit and still chop onions or wash lettuce and still reach the counter, the sink and/or appliances like the food processor, salad spinner or even the knife block.

Mostly stand but sit for fiddly things like extracting fresh fava beans, trimming artichokes (though often the current ones aren't so spiny and don't require it), etc. I rarely cut, as in ”knife skills” while sitting. Wrong orientation of shoulders to task, but have done so when I had an injury that prevented long standing. Rough cuts with the big knife standing, and a long paring knife seated, was best, But no power moves. I would not try cutting tough things like raw rutabagas or winter squash while seated! Onions and thin carrots, okay. ETA: Peeling with a peeler is a fine sit in front of the TV task, but peeling with a knife while seated is dangerous.

Oh standing for sure.

I used to have one of these kitchen stools with folding steps, and it was a good height for sitting at a counter, but it's long gone, and I never replaced it.

I definitely stand. I might sit if I need to shuck a lot of corn.

Carol, I have my grandmother's! But I never think to sit on it. The new ones are lighter weight. But Grandma’s is rickety from age. Probably needs new rivets. :)

I stand, but I have been casually looking at used auction and selling sites for a small, tall stool with casters to just give a little relief for the back and knees, but still move around.

In L.A., there is no place for me to sit while prepping (except in the dining room), and so I stand, but in Cathedral City, I generally sit at the kitchen table, as I have limited counter space there, and I have a nice quartz top for the kitchen table.

I have no problem using a knife while sitting down, and I prefer making bread dough while sitting, but in L.A., I make the bread dough in my KA mixer. My body proportions are probably different from someone who is smaller, and so it might be easier for me to prep while sitting than it would be for others.

I never peel with a knife, but there are many things that I do not peel at all that others do.

It is important to replace your peeler frequently so that it is always very sharp, at least for me. I use it to get peels from citrus fruit for making tonic syrup.

My peninsula (in L.A.) does not have an overhang to accommodate a stool, but I do have the step stool that Carol showed in my garage. I found it when I lived in Culver City.

I'm like you all, I stand unless I have a big project - like preparing kumquats for marmalade. The way my kitchen is designed doesn't leave any room for stools and such.

I stand unless I’m doing a lot of prep. I have bad knees and there’s a limit to how long I can stand any more.

I stand most of the time too, but sometimes if my husband is sitting at the counter I will push a cutting board and knife along with garlic, ginger, etc to be minced:) . He will do the same for me if I'm sitting there tired from standing. Grating cheese is nice to do sitting down too.

Yes! the angle for grating cheese is better sitting down, unless it's just a sprinkle with a microplane.

So, thinking on it more, standing, it's easy to reach things, wash things, etc. sitting, one needs a scrap bowl, a raw bowl, a finished bowl, a water bowl... And then, if one needs something, or needs to make room, one still needs to get up. I have GelPro mats, Crocs, and other aids to standing. When I'm super-tired and prepping for dozens (pre-pandemic) bare feet is better than such ”active” standing...but usually still less tiring than sitting...

When iw as a sweet young thing I sat even washing dishes on that costco stool, then my toddlers took it over and we bought another to sit at the counter/table to eat. They grew......and we moved to a house with a narrow kitchen and the stool got relegated to a paint/wall papr stool.

Now I am old and creaky and stand to chop and dice...maybe better get another stool.

Somethings have to be done sitting like shelling peas or beans. Otherwise, standing. You get more umph with a knife standing.

I have razor-sharp Japanese knives that do not require oomph for chopping, but then I never chop things like butternut squash.

When I chop at my kitchen table, I put everything I need on the table first, so that I do not have to get up until I am finished.

I do not like sitting on stools to do anything, and now we only have them in the patio. However, we got new chairs for the patio,

and now we do not need to use the barstools, unless we have company, which is rare these days. We still have six barstools outside, four of which will swivel.

Depends on what I'm doing and how I'm feeling. Some days I'm sitting to do stuff, I stand a lot... many days I'm dancing around while prepping.

If I have a lot of peeling or chopping or shucking, I sit at the kitchen table but I sit on a pillow to make it a more comfortable height. My mom had a stool like the one above and she often sat. Maybe because she suffered from terrible vericose veins after my little sister was born?

If sitting at a table is a little too high to comfortably chop or whatever, use an ironing board. You can adjust them lower to suit :-) Don’t ask me how I know ;-D

Lars you also have fine manly muscles. I, on the other hand have old lady wrist problems LOL
