kitchen light fixture help!

I just removed a large fluorescent light fixture above my kitchen island. I had planned to replace this with one Sputnik fixture and potentially make a frame around this so I wouldn't need to paint the entire ceiling at this time. Once I removed the fluorescent fixture I was greeted by 3 holes in my ceiling (happy new year to me ;)) The 2 on the ends are 6.5" in diameter. Should I change my strategy to three pendant lights? Looking for a solution that doesn't require me to paint my entire ceiling since there is no logical end point on the floor of my house (would require all of the ceiling to be painted).
