Carrots in baking - cooked or raw?

All of this cookie talk has us searching for a new flavor. This morning, we're baking Carrot Orange cookies with ginger. The recipe, which we're following, calls for cooked and mashed carrots. Would raw shredded carrots work just as well in terms of flavor and texture?


Here are the finished cookies and the recipe we used:


2 sticks unsalted butter

1 cup granulated sugar

4 cups AP flour

1 cup cooked and mashed carrots

2 teaspoons baking powder

2 eggs

1 tablespoon vanilla extract

1 tablespoon ginger powder

all the rind of a navel orange

all the juice of the orange


Cream the sugar, butter, and orange rind. Add the carrots, eggs, vanilla, juice and mix well. Combine the flour and baking powder and then add to the mixture and mix on low speed. Bake at 350 degrees for 20 minutes. Yields around 4 dozen cookies.
