Comments (14)I think Shepherds Pie is a great choice! A bit of a change up from the chicken and pasta dishes and perfect for Fall. Here is my recipe Shepherds Pie 4 tbsp vegetable oil 1 1/2 pounds ground beef 3/4 cup diced onion, about 1/2 medium 1 cup diced celery 2 cups diced carrot, about 2 medium 2 cloves garlic, minced 1 heaping tbsp tomato paste 2 tbsp flour 1 cup red wine (can omit)_ 2 1/2 cups beef stock ( I use 1/2 stock one half my brown sauce) 1 sprig rosemary 1 sprig thyme Salt and pepper to taste 4 medium cooking potatoes, peeled and quartered 2 cloves garlic, smashed butter 1/4 milk 1/4 cup grated parmesan cheese salt and pepper to taste 1. Add 2 tbsp vegetable oil to large pan over medium high heat. Add ground beef. 2. Cook until excess liquid is gone and meat is starting to brown. If required drain of any fat. 3. Remove meat from pan and deglaze with red wine or beef broth, let reduce slightly. 4. In another large pot, add remaining vegetable oil over medium high heat. Add onions, carrots and celery; cook until soft but not browned, about 5-7 minutes. 5. Add garlic and add tomato paste. Brown paste slightly then sprinkle in flour. Cook out for a minute or two 6. Add in red wine, scraping up brown bits from bottom of pan. 7. Add beef stock, rosemary, thyme. Return browned meat to pot. Simmer, covered for 20-25 minutes. 8. Remove lid and continue cooking for another 10 minutes; liquid will reduce and thicken. Remove rosemary, thyme . Season well with salt and pepper. Potatoes 1. Add quartered potatoes and smashed garlic to medium pot. 2. Boil until potatoes are tender but not overdone, about 15-20 minutes. 3. Strain potatoes; let dry out slightly in colander before returning to pot. Add milk, butter, pepper, Parmesan cheese and more salt if necessary. 4. Mash using a potato masher. Preheat oven to 400. Spoon filling into the bottom of a 10-inch round casserole dish. Top with potatoes. Grate parmesan cheese on top and dot surface evenly with butter. Season with salt and pepper. Bake on middle rack until top is golden and filling is warmed through, about 20-25 minutes. Let stand for a few minutes before serving. For a crowd I make the meat mixture a day or two ahead and refrigerate. I also make the potatoes a day ahead. On the day of, I bring the meat to a low simmer, just barely heated through, then top with the potatoes and throw in the oven a half hour or so before serving....See MoreHelp Me Choose - Limited Menu for Hosted Dinner
Comments (18)If they were shared or your family and friends are folks that would order individually but share at the table, I would do appetizers 2,4 and 6 -- thinking two safe bets and one outside the box that most people would probably enjoy trying. If they are going to be ordered individually and not shared then either 1,2 and 4 or 2,4 and 5. For the entree, I am going to be the one to disagree. While DH likes Ceasar salad, I find it over done -- as in too often and overpowering garlic. I would much rather have the arugala salad as an option. To that I would add the salmon, either the ribs or pork shank and the beef. My guess is most kids would like the burger or the ribs if they didn't love one of the others, so I'd probably not chose the burger -- but again, you know your crowd....See MoreDinner for friends-menu
Comments (11)Make ahead lasagna is possible and wonderful. Buy a bagged salad too. Good wine and you can do a antipasto platter with meat on it for the meat eaters, and some bean dip (store bought) for the vegans. I'm kind of lazy so I would do some bakery cookies (I'd put them on a cool tray to look snazzy) or some easy peasy home made ones with decaf coffee and liqueur for dessert. You could also do make ahead eggplant parmesean if you are a real masochist. Which reminds me of one of my other favorite "for company" dinners, which is quiche with store bought crust. Easy as pie to make one with ham and one without. Serve with ratatouille and crusty bread and salad, or steamed asparagus. Skip the cheese for an appetizer and maybe do guacamole and corn chips and then the cookie platter again for dessert. Last but not least, baked ziti or penne is even easier than lasagna. Another version of lasagna is also enchiladas, which I sometimes do for company, also can be made ahead. Baked ziti can also be served as a side with a roast chicken, which is just about the easiest and most wonderful thing to make for a dinner party. Can even do it in the crockpot. I make chicken cacciatore in the crockpot and serve it with vegetarian baked ziti for my meat eating family members, and then maybe have baked squash as a side for the vegetarians, which can be done in the oven along with the chicken. Comments (30)But I'm still with Olychick! Borrow some more TV trays of any kind you can lift. I used to do mill around food for buffets which could be eaten one handed, including special plates for the purpose that made it easy to hold plate and cup, but people still wanted to sit to eat and have at least a tray table to set things on. If you can't borrow any, try milk crates, wood barrels or boxes, small occasional tables, etc. Or even rent some bar/cafe tables (the little round ones). Easier to adapt your environment than convince people to not want a table....See Morenekotish
