How important is maintaining symmetry in kitchen countertop height?

I initially wanted to raise our kitchen counters all to 38” height, but found out if I keep my slide-in range instead of replacing it with a cooktop that I should keep the present height of 36” for fitting it. I have a small yet open kitchen, approximately 12’x12’ space with a back wall of appliances, a parallel prep island, and parallel to that a long peninsula that houses my sink and DW and bar seating. Would it be acceptable to keep my appliance wall countertop height at 36”, and also the prep island height at 36” and only raise the peninsula/bar to 38”? We are tall people and want to be ergonomic/comfortable working in the kitchen..ie loading the DW, cleaning pots at the sink etc. The view into our open kitchen from our family room would be the peninsula first, ending with the back appliance wall. Thoughts…?
