Anyone cook with cider apples?

Our eating apples ripened and dropped early this year. Due to lack of water I think. But our (Ben Davis I think) cider apple trees are loaded right now. I know cider and eating apples have different characteristics. I eat these apples but they definitely aren’t my first choice. The skin is fairly tough.

I usually dry a fair amount of apples. And make applesauce. I have already done some of each. I was also thinking of freezing some apple pie filling. But I am wondering if cider apples would work.

Google searches were all about cooking with cider or cider vinegar. So any thoughts?
