Old flour

Early in the pandemic I bought a bunch of flour ib bulk and separated it into six pound vacuum sealed bags. I remember looking st the Use By dates at the time and thinkibg I had a year to burn through it. Well, now it’s over two years and I’m still working through my stash. It seems to be working fine so I haven’t given it much thought until now. What happens to old flour? Are there any telltale signs I should be looking for? Concerns?
