Emily it would be best to submit photos of the interior with any examples that you can reference. When I think tract home from the 90s I think contemporary ie. NO mouldings or trim gee gaws what so ever. It’s all about the home and the scale of the space. Again, pictures tell a thousand words.

Hmmm, that’s might work. I may need to get samples to compare. Does anyone have experience with Omnia? How do they compare in terms of price and quality? also, I realized a complicating factor is that we’ll have lots of pocket doors. So I either need a manufacturer that makes both levels and pocket door hardware, or I need to make sure finishes coordinate between manufacturers.

There are hundreds of photos on Houzz. Search for "Multi-slide doors" in Photos. Most of the sliders can be stacked back into a "pocket" but it needs to be planned ahead of time. I didn't pocket mine because I didn't want the extra wall thickness and it just seemed like an extra place to collect dirt and critters when the sliders are closed. We will rarely have the 6-panel 18 ft wide slider completely open, so I preferred having a standard installation. Spend the money on the biggest sliders you can get to fit the space. Ours are 10 ft high.

If all of the negative comments haven't convinced you and you still want to proceed, I would look at something like this with frosted glass. The naysayers will call this a double no-no whammy with barn doors AND glass, both of which aren't seen as great doors for bathrooms. I have a glass panel pocket door on my master bath, with obscured glass. It is a good quality Simpson Douglas Fir frame and it provides plenty of sound barrier and privacy, so I don't agree that glass can't work. I'd like this one better in white:
