Sealing an oak table

Kind of a long post, but I need help! I am refinishing a kitchen table made of oak. I have sanded it down to the raw wood and would like to keep it that way. I need to seal it with a sealer that is extremely durable( waterproof, scratch resistant, etc.). The run of the mill sealers at Lowe’s and Home Depot aren’t tough enough. I don’t want to change the color of the wood at all, which an oil base would do. I have spent hours of research on conversion varnish, acrylic, waxes, oils, and so many others. It seems like I need something on a conversion varnish level of durability, but I do not have an industrial spray room! Is there anything that I can do myself? I’m making myself crazy with all this research!
