Yesterday, DH made my graham crackers. Yum!!

Last batch was chocolate grahams and they are yummy too.

Annie, is it possible you could post the recipe?

I gave this recipe to GF who thought they were *awful*. That's because she expected something like from Nabisco. These are not. They have body and flavor to them...like the difference between whole wheat bread and wonder bread. I like them softer and chewy, more like a cookie than a cracker. If you want them more like a cracker, bake a couple minutes longer. I used to be able to find graham flour around, but no more. So instead we just use whole wheat and it works fine.

Graham Crackers...makes about 44, 2 1/4” squares

1/2 c white flour

2 c graham flour (or whole wheat)

1/4 c sugar

1/2 tsp salt

1/2 tsp baking powder

1 1/2 tsp ground cinnamon

1 stick cold unsalted butter, in pieces

2 Tbs honey (he goes a little heavy)

1 Tbs molasses (he goes a little heavy)

1/4 c. water

Combine dry ingredients in food processor. Add butter chunks and process until dry and crumbly. In small bowl, mix honey, molasses and water. Add to processor while it’s running and process until it starts to ball up. (Add just a touch more water if needed.)

Wrap dough in plastic and chill in fridge for at least 1 hour. (Can refrigerate longer, but you may need to let it warm up some to make rolling easier.)

Preheat oven to 350

Roll dough to about 1/8” thick. Cut into 2 1/4” squares and poke well with fork tines. Place on ungreased baking sheet. Bake 10-12 min until lightly browned.

(DH does ours for 9 1/2 min at 325 on convection. Without convection, rotate sheets halfway through to bake more evenly.)
