Carne adovada, from Cook's Illustrated and the local on line auction

OK, so I've been shopping the on line auction again. I got two boxes full of Cook's Illustrated, Cook's Country and America's Test Kitchen Cookbooks for $8.00. They look brand new:

Apparently adovada means "marinated", so it's marinated meat, LOL. It's good enough that Elery wants me to make sure I remember which book had that recipe, he wants it again soon. I used pork chops, since we have a pig from a local place ready for pick-up and I'm just not crazy about pork chops. Makes great carne adovada, though!

I made brown rice and some frijoles to go with the meat, and Elery was very happy. The Princess stopped by and used some for nachos, and she was very happy too. That meant she didn't have to go home and get herself some supper, LOL.
